Honey Gingerbread Loaf

Nothing says Christmas like ginger bread and if you don't have the time or patience to create gingerbread men & women, then a Gingerbread loaf is the way to go! 

INGREDIENTS

    1 cup plain flour

    1/2 cup self-raising flour

    1/2 teaspoon bicarbonate of soda

    3 teaspoon ground ginger

    1/2 teaspoon ground nutmeg

    1/2 cup brown sugar

  • 1/2 cupMGO 50+ Multifloral Manuka Honey

1/2 cup water

125 gram butter

METHOD

Grease a 19cm x 29cm lamington pan, line base with paper; grease paper. Preheat oven to 180°C.

Combine flours, soda, spices and sugar in processor, process a few seconds until combined.

In a small saucepan, combine honey, water and butter. Stir over low heat until butter is melted, then add to processor and process until mixture is smooth. Pour into prepared pan and bake for about 35 minutes.

Stand 2 minutes before turning on to wire rack to cool. Dust with sifted icing sugar before serving.
