Little Honey Cakes

Ingredients

  • 3/4 cup manuka honey
  • 1/3 cup water
  • 50g butter
  • 1/3 cup firmly packed brown sugar
  • 1 1/2 cups plain flour
  • 1 1/2 tsp mixed spice
  • Pinch salt
  • 1 scant tsp baking soda
  • Extra 1/3 cup runny honey, to drizzle

Method

  1. Preheat oven to 170°c. Spray 9 x 150ml-capacity cake or muffin
  2. Tins with oil.
  3. Combine honey, water, butter and sugar in a saucepan.
  4. Heat
  5. Gently just until butter melts and sugar dissolves.
  6. Remove from heat
  7. And set aside to cool to room temperature.
  8. Sift dry ingredients into a bowl and make a well in the centre.
  9. Add Honey mixture to the well and stir to combine into a smooth batter.
  10. Spoon into prepared tins.
  11. Bake for 20 minutes or until cakes spring.
  12. Back when pressed with a finger.
  13. Cool in tins for 5 minutes to firm
  14. Before removing.
  15. Serve drizzled with extra honey
